Actually, that's exactly my point. When you call it bourbon or cognac or champagne, you're not actually naming it as it is. You're naming it incorrectly.
Hey Verrucht, I made some tequila at home and my bourbon that I made with 100% rye is about to finish aging in uncharred ash barrels. Want to try some?

I don't have a problem with using words like cognac. My character doesn't speak English, my character speaks Achaean, Hashani, and Atavian. I'm quite happy to believe that my character isn't seeing the word cognac written on the drinks list at the bar. She sees whatever the Achaean word is, which just happens to translate as cognac in English.
English is an OOC language. Your characters don't speak it, they don't understand it. They speak Achaean, or other in-game languages. Your character doesn't, RP-wise, hear English, after all, or see typed words at all. It hears Achaean, or whatever language is being spoken to it, in an RP sense.
English, then, is just an OOC thing we use to communicate what your character is hearing or feeling to you, the OOC player.

There's really just two groups of people in this sort of debate: those willing to engage in pedantics and those that just don't give a shit but want to get drunk on bubble water or burny liquid.
To most of the population champagne is now a catch-all term for 'sparkling wine', much in the same way that 'Kleenex' means a tissue and 'Band-Aid' means an adhesive bandage
