Not that I am aware of. Weren't people using the order names were showing in as a guide on how long it had been since a character entered a command and used this ooc information to metagame who they would pick for theft targets?

It has to do with its classification (legendary, warhorse, etc), but there's some level of variety within that, even. As far as effective dexterity goes, it ranges from no bonus to +10 points, but is very rarely above 4 or 5, I think?
Defence (which only provides a dodging bonus, nothing else) is based on the mount's numerical level, not classification. It also depends on your riding skill, and one of the major traits reduces the bonus.
Trample has been rumoured to depend on weight and a lot of other things, but I've never seen evidence of it (I did some brief testing of weight years ago, but without two mounts of the same level and different weight I couldn't definitively prove anything either way). I would assume it's just the numerical level, but I'm not sure.
To my knowledge, it's just the level of the mount, and non-flying mounts are just higher level than flying mounts of the same category as a rule. Pet mounts, while Legendary, are relatively low-level, and so aren't as good as real mounts at Trampling. (Or Jousting)

I agree there are a lot of ways to customize the prompt as seen in HELP PROMPT, but nothing about setting values as a percent other than your target's health. I was hoping it could be done but maybe its not documented.
It's not documented completely, but you do have the right to ISSUE ME and ask the administration really nicely if they'd be willing to update the help file with the full list of options (or at least the options they're willing to give us). I had to ask on here earlier, because I was trying to figure out the same thing.
As an aside: 'Today' should probably be 'This Month' unless we're to treat these lists as OOC information.

I generally would say that while the information in organisational/essence logs is IC, the presentation is generally just more easily followed if its OOC. Note that org logs use OOC timestamps and such for that reason.
