This is one of the things I'm most interested in hearing about. While it's a little bit difficult to tell given that we don't know quite how the system will work (the system might ostensibly provide an IC mechanism that effectively answers the second question for everyone), I'm still very curious.
So:
Do you plan to RP a sort of combination of your classes? What classes and how will you combine them?
Do you plan to RP a reason why you possess only one class's skillset at a time, but periodically swap between them?

While I'm looking forward to the mechanical advantages of multiclassing, I resent the pervasive attitude that class doesn't influence our character's mindset and is just a skin we inhabit. Some folks treat class very casually and that's disappointing enough, because I miss heavy class identity as part of characters' personae. But some go the extra mile to annoy me by treating class casually until they decide it's their opportunity to take a stand as an authority on [insert class RP topic here] becaue they've been that class for a whole year now. Unfortunately, I expect that's only going to get worse.

The swordsmanship part of it pretty much remained (I roleplayed him learning scimitars, which took him about two RL weeks to get a hold of, because he'd used rapiers all his life, and then a longsword-and-shield), while the Runelore was set aside in favour of opening up his heart (and mind, I suppose) to Devotion. Because I'd always played him as having been denied Devotion for some reason or another, it was nice to finally go with it (and his temperament's changed, as a result). All in all, one of the funnest things I've ever played, in a very mild and long-term way.
Many Eleusians have begun to realize, that Athelas is far more than the grandfather every child should have. Some have been quite shocked to realize just how dark he really is. I'm quite fortunate to have the RP history he has, because I don't think he would have been accepted as easily, if he didn't.
For example:
He was recently asked why he is Eleusian, by someone that discovered a fraction of this. His response was:
"You would not understand why I am Eleusian. In your mind, good and evil are separate entities. As are the concepts of Order and Chaos. To me, those things are but small parts of the great circle. Love and hate are but two sides of the same coin. I am the gentle sadist, the demonic angel, the Infernal Druid. You'd do well to stay away."
If Druid + Infernal is not allowed, I'll have to get creative with the class that would reflect this.
The really awesome part, by what ever fluke of coincidence, is that the seeds for this RP were planted back when Atheals wrote his books on Neutrality and Balance. That happened before he turned 50 or in more easily understood terms: 15 Real Life years ago!
Back then, he was convinced the he'd never find a Divine to serve, that would understand him and his point of view with regards to this. Now though, @Artemis fits this perspective almost perfectly, so we'll see how that one plays out.
Though I also RP something like @Shirszae described - Tael still remembers some aspects of his previous classes. He's not well-practiced enough to channel the elements like a magi anymore, but he still remembers how they work, he would still be comfortable in an element-focused ritual or something, he still has some basic knowledge of physiology, etc. He's ridiculously old, he's done a lot, and he has first-hand knowledge of a lot of things. Tael can still sing and play from the years he spent as a bard. He has first-hand knowledge of Chaos and the Chaos plane. He's achieved the first stage of the philosopher's stone. He can easily recognise runes, though he's so out of practice that he couldn't sketch them anymore. And the list goes on. I like that sort of RP because it makes grizzled old adventurers who have really gotten around feel like grizzled old adventurers who have really gotten around - they know a little bit of everything and when it comes out, it hints at the history of the character. It's annoying to see 30-year-old wunderkind RP, but Tael is nearly four centuries old. It's not that crazy that he would have some serious breadth. I always appreciate it when other people do that sort of RP and I get a little window into their character's history, and I hope others feel similarly about Tael.
It also works nicely when you change class to one that's related to previous classes - you can RP blademaster as actually making some degree of sense for someone who's been a magi (the elemental stuff), a knight (the sword stuff), and a monk (kaido/shindo) at various points. Shaman offers a wealth of RP opportunity for people who have been a lot of classes previously. Even the new tradeskills play into it - Tael's knowledge of synthesis is the same knowledge he had as an alchemist
You can definitely make it work, at least somewhat.

Priestmonk seems like the RP would be pretty similar to the Priest/Monk hybrid from Aetolia.
It's a great option for people who change class every few months, but...Meh. I'll save my credits for new shinies.
