What things are capable of being lifted off a person using pickpocketing?

Incorrect.

Default pickpocket will take:

Letters
Sigils
Gold
Keys

Targeted pickpocket can take anything, however:

Can only be used on a person infrequently (I believe once per 15m)
Low chance of success, buffed somewhat by Mesmerise

Neither bypasses selfishness, so it must be removed or every attempt will fail.

A bit slow on the response here, but just for the record, it will also take iconic shards. Most people don't really care about that though, for obvious reasons.
